Easy and Whimsical: Unique Pasta Inspired by Spinach Pie

Inspired by the classic flavors of Greek spanakopita (spinach pie), this unique pasta dish is the perfect midweek dinner.

Dough recipes in a pan are not only practical, but also functional. The pasta is cooked in vegetable broth which adds more flavor to the pasta.

Tips:

  • Spinach will cook: This is designed to be a very green dish – the amount of spinach allotted will seem like too much to fit in your pan, but add it little by little and let it cook before adding more. You can also use more or less spinach, depending on your preference.
  • Spinach Substitutes: You can also use other greens, such as kale or silver beets. Frozen spinach works too – thaw it and add it to the dough (no need to squeeze out excess moisture).
  • Herbal Substitutes: A lot of dill is used – it adds a lovely lightness to the dough. If dill isn’t your thing, you can replace it with parsley or mint.
  • Make it vegan: Using vegan feta or other non-dairy cheese.
