How long does tofu last after opening?

Tofu is a great plant-based protein, but since each block contains 4 to 5 servings, you may be wondering how quickly you should use it up after opening. Should you start planning tofu scrambles for breakfast, tofu stir-fry for lunch, and tofu tacos for dinner just to avoid wasting anything?

Once opened, tofu will last about 3 to 5 days in the refrigerator. Make sure you’re ready to use the tofu before you open the package, because the moment the seal is broken, the clock starts ticking. Keep in mind that if you frequently take it out of the fridge to portion out, you may see its shelf life shortened. And if you accidentally leave it at room temperature, the tofu will only last an hour or two before it starts to spoil. To ensure your tofu stays as fresh as possible after opening, submerge it in water in an airtight container and change the water every day. And if you’re getting close to that 5-day mark? How do you know if your tofu is expired?

Signs Your Tofu Is Expired

If you’re concerned that your tofu is going bad, there are a few signs to look out for. The normal texture of tofu should be smooth and firm or soft and silky, depending on the type. However, when tofu starts to go bad, it may develop a slimy coating, which is a clear sign that it’s no longer edible.

Fresh tofu is usually creamy white in color, but as it deteriorates, it can turn brown and even moldy. Another key indicator is the smell. Fresh tofu usually has little to no odor, but as it begins to deteriorate, it will give off a sour, rotten odor. This sour odor should not be confused with the pungent smell of “stinky tofu,” a fermented delicacy sold in night markets in China and Taiwan that, despite its strong odor, is still edible and quite tasty.

It’s important to know the signs of spoiled tofu because it can harbor harmful bacteria, which poses a risk of foodborne illness. If you notice any concerning indicators, throw out the tofu immediately to avoid any potential health risks.

Ways to Make Your Tofu Last Longer

While the shelf life of opened tofu is a bit short, there are ways to extend it so none of its flavor goes to waste. Unopened tofu will typically last 2 to 3 months in the refrigerator, though this can vary slightly depending on the brand and type. However, freezing tofu can keep tofu good for up to 5 months — and freezing tofu allows it to better absorb the flavors. Before freezing, it’s a good idea to cut the tofu into cubes or sticks — perfect for grabbing just the amount you need when you’re ready to cook. You’ll also want to squeeze out any excess moisture to prevent ice crystals from forming. You can do this by wrapping the tofu in a paper towel and placing a heavy pan on top for 10 to 20 minutes.

Cooking tofu is another way to extend its shelf life. Cooked tofu can last up to a week in the refrigerator, a few days longer than raw tofu. Consider making dishes like crispy, popcorn-like tofu for movie night with friends, then enjoying the leftovers as a tasty snack later in the week.
