Absolutely. Bake the carrot cake (steps 1-3), let it cool, cover it with plastic wrap, and store it at room temperature for up to three days. When you’re ready to serve it, prepare the cream cheese drizzle and pour it over the bread.

You can also freeze a loaf, and it should be good for up to three months. Follow the same cooling and wrapping method but add a layer of foil over the plastic wrap. Next, slide the wrapped bread into a freezer-safe zip-top bag. When you’re ready to eat it, let it defrost on the counter for a few hours. If you’re pressed for time, you can also use a microwave or conventional oven to speed up the process. Then drizzle with cream cheese.
