Located on the corner of Drake and Lemay in Fort Collins, Taco Stop is a vibrant addition to the local food scene, promising authentic flavors and a warm dining experience. As an avid Mexican food lover, I couldn’t resist trying this popular new spot, known for its traditional recipes and warm hospitality.

Atmosphere: Upon entering Taco Stop, I was greeted by a lively atmosphere and colorful decor that immediately transported me to a bustling Mexican street market. Tables were numbered with “Uno” cards. The walls were adorned with a reminder of Taco Stop’s origins: a street food stand in Old Town Fort Collins (which opened in 2012). The aroma of sizzling meats and spices filled the air. The seating was casual but inviting, perfect for quick bites and leisurely meals.

Service: The service at Taco Stop was fast and friendly, reflecting a true passion for sharing their culinary heritage. The staff was knowledgeable about the menu, offered helpful suggestions, and made sure each guest felt welcome. Orders were taken efficiently, and food arrived promptly without unnecessary delay.

Food: Now for the star of the show: the food. Taco Stop truly excels at creating authentic Mexican flavors that are both comforting and memorable. Here are some highlights from my dining experience:

  • Strawberry Orchata: The traditional strawberry flavored Orchata was perfectly blended and served with ice cream.
  • Chips and salsa: These are not your average chips. They were made fresh and served with two salsa options, green and red. With a little heat (but not too much), it was the perfect start to my meal.

  • Cheese Fries: Dipped in a delicious cheese sauce, these fries were fresh, spicy and to die for! They were served with jalapeño peppers. Yum!

  • Birria Tacos: These beef tacos, a popular Mexican dish, had an interesting twist. They were topped with a green avocado sauce. The food was fresh, plentiful and entertaining.

  • Pastor Gringas: This dish goes back to the roots of Taco Stop. The street taco! These tacos were served with fries and drizzled with a green salsa. The cilantro rice was hot and full of flavor.

Conclusion: Overall, Taco Stop exceeded my expectations with their commitment to authentic Mexican flavors, excellent service, and vibrant atmosphere. Whether you’re a local or just passing through Fort Collins, Taco Stop is a must-visit destination for anyone craving delicious, authentic Mexican street food. I left Taco Stop with a satisfied appetite and a newfound appreciation for their dedication to quality and flavor. I will definitely be back to explore more of their menu and savor the flavors of Mexico right here in Colorado.
