Indian street food is one of the best things in the world! Try playing around with this by adding some weird fusion components and we’re ready to get our hands dirty! But for once, we discovered an experience on our beloved gol gappas that doesn’t really bother us. An Instagrammer posted a video showing the preparation of boba-inspired gol gappas using molecular gastronomy and we love this blend of science with our favorite street food. Instagrammer @babasood posts about food and her love for cooking on her page. In fact, according to her Instagram bio, she’s a “questionable recipe creator.” And her latest Instagram Reel has us believing she’s quite the genius culinary developer! She used molecular gastronomy to make boba-inspired gol gappas and it’s one of the most interesting dishes we’ve seen in recent times.

True to her love for chemistry and organics, she incorporated molecular gastronomy to make boba-like balls for gol Gappa water. According to her, it’s a portable and easy way to carry your gol Gappa water. So, she didn’t play with our beloved street food, but simply transformed it into a boba-like object and used it to prepare gol gappas. She used sodium alginate and calcium lactate to make these boba-like molecules and we think it’s pure genius!
